Kimchi is a traditional Korean dish made from fermented vegetables, most commonly Napa cabbage. It is a spicy, sour, and flavorful side dish that can be enjoyed with rice, meat, or soup. Making your own kimchi from scratch is easier than you may think, and it can be a fun and rewarding experience. In this blog post, we will go through the step-by-step process of making kimchi at home.

Ingredients

Here are the ingredients you will need to make kimchi:

  • 1 large Napa cabbage
  • 1/2 cup of coarse sea salt
  • 1/2 cup of gochugaru (Korean red pepper flakes)
  • 1/4 cup of fish sauce
  • 1/4 cup of finely chopped garlic
  • 1/4 cup of finely chopped ginger
  • 2 tablespoons of sugar
  • 1 bunch of green onions, chopped
  • 1 large carrot, julienned

Instructions

  1. Cut the Napa cabbage into quarters lengthwise and remove the core. Cut each quarter into bite-size pieces and place them in a large bowl.
  2. Add the sea salt to the bowl and massage the cabbage with your hands for about 10 minutes, until it releases some water.
  3. Rinse the cabbage under cold running water a few times to remove excess salt. Drain the cabbage and squeeze out any excess water.
  4. In a separate bowl, mix the gochugaru, fish sauce, garlic, ginger, and sugar to make a paste.
  5. Add the green onions and carrot to the paste and mix well.
  6. Add the cabbage to the paste mixture and mix well, making sure that the cabbage is evenly coated with the paste.
  7. Pack the kimchi into an airtight container, leaving some space at the top for expansion.
  8. Leave the kimchi at room temperature for 1-2 days to allow it to ferment. After the first day, check the kimchi and press it down with a spoon to release any air bubbles.
  9. Once the kimchi has fermented, store it in the refrigerator. It will continue to ferment slowly in the fridge and will be ready to eat after a few days.

Conclusion

Making your own kimchi is a fun and easy way to add some Korean flavor to your meals. With just a few simple ingredients and some patience, you can enjoy homemade kimchi that is even better than store-bought. Give it a try and impress your friends and family with your culinary skills!
